2017 Vyborny Vineyards Cabernet Sauvignon
Our "Block Cutter" Cult Style Cabernet Sauvignon, with grapes gown in the heart of Alexander Valley and prouced in the high altitude of Truckee, CA is an elegant and refined cult-style Ca Cabernet.
Tasting notes
Best to enjoy on a cold winter's night - it will warm your soul. Subtle aromas of new leather, ripe bell pepper and hints of black pepper. Smooth like black velvet with a touch of aprium, blackberry, and violet. Finishes strong but clean with black current, cassis, and subtle licorice.
Production notes
Production Process:

Grapes are harvested in September. They are hand picked and hand sorted at the vineyard.

Grapes are destemmed and softly crushed. The must is cold soaked with its skins for 24 hours for a optimal color extraction.

Afterwards fermentation begins at a controlled temperature with 4-6 daily manual punch downs.

Once primary fermentation concludes, the wine is pressed and seperated from its skins.

The wine is then transferred to stainless steel where aging, clarification and body stability can occur.

After a time determined by our wine maker our Cabernet Sauvignon is then transferred into French and American oak barrels for a minimum of 36 months aging.

Once bottled, we age for another 3-6 months before releasing for enjoyment.

Food Pairing Notes: Our well balanced traditional syle Cabernet pairs well with a multitude of dishes. Enjoy this with lamb skewers, pork sliders, steak and blue cheese salad, Prime Rib, and even Mac & Cheese (try a truffle mushroom mac to really add depth).

This is one unique vineyard to say the least. A half-acre of dried up river bed, scattered with randomly-planted, barely-tamed grape vines. Though it may look like a messy rock jumble, in actuality this vineyard is a museum of pre-prohibition cuttings, masterfully curated by one Alexander Vyborny.
His unique and timeless style of pruning, prepping and planting are a rarity these days. Alex has cultivated these vines for over 40 years and so when he says "time to pick" we trust him!
Producing a 100% Cabernet Sauvignon at this level can only be achieved when the vintner is as knowledgable about his grapes as the winemaker is about his style.
Russ Jones was born in Yosemite National Park, where he spent most of his childhood, until his family moved to Squaw Valley. Russ learned how to ski in Yosemite, but he learned how to race in Squaw. He spent his high school career racing and loving the snow. He and his wife met on the high school race team, where Russ dominated the field. He graduated from UC Davis with a degree in Enology and Viticulture (winemaking and grape growing). He and his wife traveled through Oregon, Washington and Paso Robles after graduation, where he worked at several wineries and perfected the Pinot Noir process. They then moved back to Truckee to start a family, and that is when he decided to make his own wine, using the natural ideal temperatures and humidity of Tahoe to make the wine distinctively unique. His artistic and analytical mind ensures that the science and art in winemaking is used to its potential. With this perfect blending of art and science, Truckee River Winery's wines have exceptional flavors and aromas.
