Production notes
In September, grapes are hand-harvested and meticulously sorted at the vineyard. Following destemming and gentle crushing, the must undergoes a 24-hour cold soak for optimal color extraction. Fermentation, at a controlled temperature, includes four to six daily manual punch-downs. Upon completion of primary fermentation, the wine is pressed and separated from the skins. It is then transferred to stainless steel tanks for aging, clarification, and stabilization. After a period determined by the winemaker, the Cabernet Sauvignon is aged in a combination of French and American oak barrels for a minimum of 36 months. Finally, the bottled wine is aged for an additional three to six months before release.

This is one unique vineyard to say the least. A half-acre of dried up river bed, scattered with randomly-planted, barely-tamed grape vines. Though it may look like a messy rock jumble, in actuality this vineyard is a museum of pre-prohibition cuttings, masterfully curated by one Alexander Vyborny.
His unique and timeless style of pruning, prepping and planting are a rarity these days. Alex has cultivated these vines for over 40 years and so when he says "time to pick" we trust him!
Producing a 100% Cabernet Sauvignon at this level can only be achieved when the vintner is as knowledgable about his grapes as the winemaker is about his style.
