Production notes
In September, our Zinfandel grapes are hand-harvested and meticulously sorted at the vineyard. Following destemming and a gentle crushing, the must undergoes a 24-hour cold soak to optimize color extraction. Fermentation commences at a controlled temperature, accompanied by four to six daily manual punch-downs. Upon completion of primary fermentation, the wine is pressed and separated from the skins. It then rests in stainless steel tanks for aging, clarification, and stabilization. Following this initial aging, the Zinfandel is transferred into a selection of French and American oak barrels for a minimum of 12 months of further maturation. Finally, after bottling, the wine undergoes an additional three to six months of aging before release, ensuring it reaches its full potential for your enjoyment.

Food Pairing Notes: Old Vine Zinfandel has amazing versatility which makes it a wonderful wine pairing for a variety of dishes. Any type of meat-whether its pork, beef or game is ideal with this wine. Mushrooms, earthy flavors and rich dishes work wonderfully. One of ultimate favorites is osso bucco.
